Law Enforcement can tell that an audio file hasn't been altered, right?

Depends how.you mean. OS's put different flags on files depending on how and when you access them. There are also standards for file formats that might indicate a file has been changed if not followed properly. But without something to compare it to, it would be pretty difficult to tell if any one file is "original" or not or been altered.
